Lysozyme is a ubiquitous enzyme, with hen egg whites being its most abundant source, constituting about 3.4% of the albumen proteins. It functions as a natural antimicrobial agent by hydrolyzing the β(1-4) glycosidic linkage between N-acetylmuramic acid and N-acetylglucosamine, components of the peptidoglycan layer in bacterial cell walls, thus causing cell lysis. While lysozyme's bactericidal impact is predominantly against gram-positive bacteria, including pathogens like Listeria monocytogenes and some Clostridium species, as well as spoilage organisms like thermophilic spore-forming bacteria and certain yeasts, gram-negative bacteria exhibit greater resistance due to their more complex cell wall structures[1].

Moreover, at a concentration of 1 mg/mL, lysozyme disrupts the protective capacity of hyaluronan (HA) against elastase damage to elastic fibers, indicating its potential impact on tissue integrity and inflammation processes[3].
